I was able to help myself, but I I don’t know where to submit this little usability/feature issue.
After being stuck with having max 2 columns for the grid view (6 latest posts to display), I found out that I needed at least 3 posts so I can select 3 columns. Otherwise I am blocked to 2 columns.
This is not really meaningful usability experience especially when you are developping a new site and have no posts or just one as an example..
This behavior was detected with WP 6.4.2.

“WordPress contains different types of content, and they are divided into collections called “Post types”. By default, there are a few different ones, such as blog posts and pages, but plugins could add more. If you’ve created a custom post type with your theme or plugin, you can add it to the Query Loop Block as an option by making sure that `show_in_rest` is set to true.”
